Pizza pride is a pretty touchy subject. If you don’t believe me, just ask people from New York City, Chicago, and yes, Buffalo.
Detroit style pizza has garnered some well-deserved reputation over recent years; Pizza Hut even had their own version of Detroit style not too long ago. Old Forge and New Haven even have their own unique styles of pizza.
It seems as if Buffalo style pizza hasn’t gotten its fair share of hype nationwide as other varieties of other pizza cities. That should change and I always tell people who visit Buffalo, you have to go to Bocce Club, Picasso’s, Imperial, Macy’s or any other Buffalo pizza place to try it for yourself.
The slightly thicker crust. The extra cheese and toppings. The sweeter sauce. The cup-and-char pepperoni. It’s flat-out glorious. There’s nothing like Buffalo style pizza.
While pizza in New York City is fabulous and the deep dish variety in Chicago is great, Buffalo, NY should be at the very least in the discussion for pizza capital of America.
Being born and raised in the Queen City, that sounds a little biased, but there are some genuine reasons for that distinction. You might even be a bit scared how accurate these are.

The Taste
This one is pretty obvious but it needs to be mentioned. Buffalo-style pizza is “stick-to-your-ribs” kind of pizza. It’s hearty. The extra cheese, sweeter sauce, slightly thicker dough and cup-and-char pepperoni all contribute to the amazing taste that locals can’t get enough of, and rivals any other pizza destination.
National Chains Emulating Buffalo Style Pizza?
Just to be clear, nearly every Buffalo native believes pizza from a local place beats a national chain, however, ever notice that pizzas at Papa John’s, Dominoes and Pizza Hut’s pan pizza, has some consistencies with Buffalo style, particularly the thickness of the crust? Maybe America will love Buffalo pizza and they just don’t know it yet, because they’ve been getting the bargain-bin variety.

A very interesting find, done by Arthur Bovino, who is the author of a book called “Is America’s Pizza Capital Buffalo, NY”, is the vast amount of pizzerias in Buffalo vs. anywhere else. Yes, New York City and Chicago are much bigger cities, but did you know Buffalo has more pizzerias serving its population than anywhere? Buffalo has more than 600 pizzerias, which works out to about one pizzeria for every 430 people based of its total population. NYC has one pizza place for every 5,300 people…
Lack of Crust
A classic trait of Buffalo pizza is the lack of crust. Many places you’ll see the cheese, sauce and pepperoni extent over the edge of the pizza, so there is no outside crust. If the pizza has a huge crust than that’s less saucy, cheesy goodness, which is bad. You get your money’s worth with Buffalo pizza.
A Long History of Buffalo Pizza
Buffalo pizza isn’t some new style that;s only been around for 10-20 years. It’s oldest pizzeria is Santora’s, from 1927, and that predates some of NYC’s famous pizzerias. Bocce was founded in 1946. La Nova in 1957.
